INGREDIENTS

  • 1/2 fresh cantaloupe, cut into 1-inch pieces
  • 1 pint fresh cherry tomatoes, halved
  • 1/4 cup fresh mint
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt and black pepper

DIRECTIONS

  • In a large bowl, gently toss the tomatoes, cantaloupe, mint, oil, and 1/4 teaspoon each salt and pepper.
  • Serve and enjoy!

Pasta Salad With Cantaloupe, Feta, and Dill

INGREDIENTS

  • 4 cups cubed fresh cantaloupe (from 1/2 melon)
  • 1/4 cup chopped fresh dill
  • 3 tablespoons olive oil
  • 2 tablespoons sherry vinegar
  • 1/2 pound orecchiette, or your choice of pasta
  • 1/3 cup crumbled feta
  • Kosher salt and pepper

DIRECTIONS

  • Combine cantaloupe, dill, olive oil, sherry vinegar, and salt and pepper. Let sit for 10 minutes.
  • Meanwhile, cook orecchiette (or your choice of pasta) according to the package directions. Rinse under cold water until cool, drain well.
  • Toss with the cantaloupe. Top with feta just before serving.
