Chef George Sarris

In the more than 30 years that he has been in the restaurant business in Birmingham, George says he's discovered that Greek hospitality isn't so far removed from the Southern variety. Over the years, George's restaurant, The Fish Market has grown much bigger and now offers many more choices. He still offers his own quality Tsitalia olive oils. Named after the village where he grew up, these oils come from olives grown by families George has known for years. And his selection of cured olives and spices are as abundant as ever. George has expanded his specialty foods market to offer convenient, one-stop shopping with locally grown vegetables, homemade sauces, breads, marinated items, herbs, imported Greek foods and seafood-perfect wines (many of them organic).

The faces at The Fish Market are all familiar, too. Some of the folks you see behind the counter and in the dining rooms have been with George since he purchased the business from his uncle, the late Jimmy Hontzas, in July 1982.
