INGREDIENTS

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups sugar
  • 1 cup milk
  • 2 cups fresh persimmon pulp
  • 2 farm eggs
  • 2 teaspoons vanilla extract

DIRECTIONS

  • Preheat oven to 300*F. Grease and flour a 9x13-inch cake pan.
  • Whisk together the flour baking powder, baking soda, salt, and sugar in a bowl, set aside. Whisk together the eggs, persimmon pulp, milk, and vanilla extract in a separate bowl until smooth. Fold the persimmon mixture into the flour mixture until no dry lumps remain. Pour into the prepared pan.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, about 1 hour, 15 minutes. Cool in the pan 10 minutes, then remove from the pan, and allow to cool completely on a wire rack before icing.

INGREDIENTS

  • 2 farm eggs
  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 teaspoon ground cinnamon
  • 1 cup persimmon pulp
  • 1/2 cup chopped walnuts
  • 1 teaspoon baking soda
  • 1/2 cup raisins

DIRECTIONS

  • Preheat oven to 325*F. Oil a 9x4 inch pan.
  • In a small, bowl, combine flour, cinnamon, salt, nuts, and raisins.
  • In a large bowl, blend eggs, sugar, and oil. Mix baking soda into pulp, and add to sugar mixture. Fold in flour mixture. Pour batter into prepared pan.
  • Bake for 75 minutes, or until tester inserted in the center comes out clean.
