Cinnamon Toast Pumpkin Seeds

INGREDIENTS

  • 3 tablespoons butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh pumpkin seeds
  • 2 tablespoons white sugar

DIRECTIONS

  • Preheat oven to 300*F.
  • Mix butter, cinnamon, and salt together in a bowl.
  • Place pumpkin seeds in a large bowl and pour butter mixture over seeds; toss to evenly coat. Spread coated seeds in a single layer onto a baking sheet.
  • Bake in the preheated oven, stirring occasionally,  until seeds are lightly browned, about 40 minutes. Remove baking sheet from oven; sprinkle sugar over seeds and stir until evenly coated.
  • Enjoy!

INGREDIENTS

  • 1 1/2 cups milk
  • 1 cup pumpkin puree*
  • 1 farm egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar
  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

DIRECTIONS

  • In a bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a seperate bowl. Stir into the pumpkin mixture just enough to combine.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
  • Enjoy!
NOTES: To puree a fresh, Alabama pumpkin, preheat oven to 325*F. Cut pumpkin in half, stem to base, removing seeds and pulp. Cover each half with foil. Bake in the oven, foil side up, 1 hour, or until tender. Scrape pumpkin meat from shell halves and puree in a blender. Strain to remove any remaining stringy pieces.
